From Curd to Golden Granules
Most commercial brands melt butter directly from raw cream using fast steam boilers. At Phogat Farm, we strictly adhere to the ancient Bilona Curd method:
1. Whole Milk Curd Fermentation
Fresh Murrah buffalo milk is boiled, cooled, and cultured to set into rich curd overnight.
2. Wooden Bilona Churning
The curd is churned bi-directionally using a wooden churner to extract butter (makkhan) and separate buttermilk.
3. Wood-Fire Clarification
The butter is slow-cooked on traditional wood-fires, creating perfect amber danedar granules.
